Is it just me or does anyone else feel the beginnings of spring in Charleston? The sun is shining, warm weather is back, and all the little birds are back to chirping in the morning. I love this time of year because we’re on the cusp of having some really great produce back in season and the Farmer’s Market will be back! So to get ready for the spring season, I’ve rounded up some of my favorite spring recipes that you can easily whip up and make an excellent lunch for the next day!

This is one of my favorite dishes to eat during the spring. It’s light, easy, and incredibly refreshing to eat. It’s one of my go-to’s on spring nights and I can make enough for lunch the next day. Plus, beets are great for your skin!
Rainbow Spring Rolls

I’ve made these Rainbow Spring Rolls many times now and they’re still my go-to recipe during the spring/summer. They’re chilled to perfection, healthy, and they look beautiful! One note of advice, take your time with the rice paper! They’re prone to tearing!

Ok, truth time. I’m a HUGE fan of grilled cheese. The gooier the better in my book and this grilled cheese covers all the bases for me. Whether it’s a gorgeous spring day or a chilly night, this sandwich will warm your heart and stomach.
Pasta Salad with Roasted Tomatoes and Mozzarella
An easy go-to for me on busy nights is this tomato and mozzarella dish. It takes less than 30 minutes and is a huge crowd pleaser! Throw in some onions and mushrooms to up the veggie factor and keep your body healthy.
Asian Zucchini Noodle Salad

For those that love your spiralizer, please stand up! Since getting one for Christmas I love to make noodles out of any vegetables and this dish is no exception. There’s just something so calming about spiralizing vegetables and seeing the array of colors they make. Chill this overnight and make a ginger dressing for extra flavors and a pretty lunch the next day.
Soba Noodle Salad

There’s a bit of a theme here! Another easy favorite is a Soba noodle bowl. These noodles will be ready in 3 minutes and can be tossed in any dressing. My personal favorite is a Pad Thai or Honey Teraki sauce. Or go naked and let the vegetables do the talking for you.
Smashed Chickpea and Avocado Sandwich
This sandwich has saved my lunch too many times that it deserves an award. Since I”m a vegetarian, tuna is out the door but this avocado and chickpea sandwich is an excellent replacement. If you want to truly make it vegan, opt for some faux-mayo and definitely don’t forget the pesto. It’ll rock your world and make all your coworkers jealous.
Mediterranean Quinoa Bowl

I promise this is the last power bowl! But seriously, power bowls are the bomb-diggity y’all. Plus they just look so appealing that you forget how healthy you’re eating! For you meat lovers out there, I bet this would taste amazing with some roasted chicken thrown in too. If you need a quicker grain to make, try making some cous cous instead of quinoa!
