Yum. That’s all I’ve got. Yum. I’ve been craving gnocchi lately and only had a few ingredients on hand for this dish, but honestly, it doesn’t need much. Personally, I’m a fan of low-key, minimalist dishes and this one fits the bill. Typically I fix my gnocchi with cheese and some sauce but this is just so much better. Plus it only takes 15 minutes to make which is fantastic for days when I’m rushing from work to home to projects in between for the blog. May I introduce: baked gnocchi with pesto and tomato.
You can truly make this dish your own. I happened to have a ton of grape tomatoes on hand as well as pesto and Parmesan cheese. Want to throw in some meat in there? Go for it. I won’t but that’s because I’m a veggie lover.
A handful of grape tomatoes
One package of gnocchi
Two large tablespoons of pesto
A generous amount of Parmesan cheese

Preheat your oven to 350 and begin boiling a large pot of water. Slice the tomatoes and once the water has boiled, cook the gnocchi. Be careful though to not overcook the gnocchi! It will begin floating to the top of the water within 2-3 minutes. Drain the water. Place the gnocchi, tomatoes, and pesto in an oven safe dish. Mix thoroughly and add the cheese on top. Bake for about 15 minutes. Done.
As I cooked this dish, it filled my home with such a delicious smell. I was dying for it to finish so I could have some! If you’re ever in a pinch, a hurry, or just lazy, I highly recommend this dish. I’ve even heard bacon is good in it. Tell me about that in the comments! Maybe I’ll get crazy and add vegan bacon next time (or maybe not).
