I think its safe to say that this week is a wedding week. But what could be better than celebrating the friendship and love between two people? Nothing. Ok, maybe puppies and kittens but it’s a pretty close call.
When I was thinking of what to give my friends for their shower, it’s so easy to go onto their registry and pick out a set of dishes or towels. Personally, I like creating homemade, touching gifts I know will enrich their lives in a different way. Plus this basket is all about food. Who doesn’t love quality ingredient food? Crazy people, that’s who. That’s what led me to create the “Post -Honeymoon I Don’t Feel Like Cooking” Basket. What’s in this great food basket? Everything you’ll need to make a quality homemade Italian meal. Nothing says welcome home like a belly full of pasta. The best part of this basket is how easy the customization is.
Inside the basket I placed, a jar of pesto and sauce, two different types of pasta in a mason jars, and an easy, quick recipe. Oh, and wine. We cannot forget the wine. The recipe is an easy and quick one which is ideal for any couple coming home from a vacation and really are just too tired to cook.
Now, I’m not claiming to be the great inventor of this basket (and whoever you are, good job) but it did spur an idea after a friend told me about her post-honeymoon adventure. She and her new husband had just left their honeymoon only to move into a new home with no furniture, no food, nada. However, a wedding guest had supplied them with a basket just like this and the night was saved! Good food and wine was had, albeit eaten on the floor with paper plates. How romantic is that? Truly, this basket is a lifesaver of marriages.
And in case y’all are curious for the recipe, here it is for all you hungry folks.
8 ounces whole wheat short pasta
⅓ cup extra virgin olive oil
3 cloves garlic, minced
1 11.5 ounce package
kosher salt and freshly ground black pepper
2 cups fresh spinach leaves
⅓ cup fresh basil, slivered
½ cup freshly grated Parmesan cheese
1 cup fresh ricotta cheese
Cook the pasta about one minute less than the package directions and drain. Keep about 1/4 cup of the pasta water.
In a large saute pan, heat the olive oil over medium heat. When hot, add the minced garlic and reduce the heat to medium-low. Cook for about 5 minutes or until the oil becomes fragrant. Add the tomatoes, salt, and pepper and cook for 2-3 minutes until warmed through.
Add the drained pasta to the tomatoes with fresh spinach. Toss and cook until the spinach begins to wilt, but just a little bit. Add the fresh basil leaves, grated Parmesan cheese, and salt and pepper to taste. If the pasta seems dry, add more olive oil or pasta water to the mixture. Top with dollops of ricotta, drizzle with more olive oil and serve.
