Did you know that on March 25th it is official Waffle Day here in the States? So we did the only thing any great American would do, have a waffle party with my girlfriends! This was such a fun day full of amazing waffles, funny stories, and maybe a touch too many mimosas made with the delicious One Hope Wine.
The best way to kick off a waffle party is by preparing some delicious mimosas! If you’ve never heard of One Hope Wine, you’re seriously missing out! One Hope Wine donates a portion of each bottle of their wine or champagne to a non-profit. So why not drink some amazing wine and help a worthy charity? Plus how great are their glitter bottles?! They would make the perfect gift for anyone!
We made our mimosas with some fantastic ginger orange juice from The Daily. It gave the mimosas an extra kick! If you’re ever visiting Charleston, The Daily is definitely worth visiting for their fresh juices, coffee, and delicious avocado toast.
We had some of the BEST toppings for our waffles including a delicious salted caramel sauce from Alma, peach apricot (my favorite!) jam from Sarabeth’s, Sallie’s Greatest strawberry and basil jam, and some seriously delicious maple syrup from Blis Gourmet and Falling Bark Farm. Truly, we had quite the spread of toppings! We got all the toppings from Southern Season, which is seriously one of the best stores for food and gifts. I love getting my family and friends unique food from there to turn into delicious meals. Also, as a big lover of all things local, Sallie’s Greatest is made in South Carolina!
Seriously, how delicious do these waffles look? It’s ok, it’s making me drool too! Don’t worry, I’ve provided this incredibly easy recipe below. They only take 20 minutes to make and they’re excellent the next day too! I’ve taken to making a few extra ones to freeze as a quick breakfast option on mornings I’m a little rushed.
You can’t have a waffle party without a good, strong cup of coffee!

You know it was a good meal when there’s not one bite left on the plate! We had a blast celebrating waffle day with a big ol’ fashioned waffle party! But don’t just celebrate waffles on their official day, waffles are meant to be celebrated every day! As my hero Leslie Knope says, “We have to remember what’s important in life: friends, waffles and work. Or waffles, friends and work. But work has to come third.”

Belgian Waffle Recipe
2 cups all-purpose flour
1 3/4 cups milk
1/2 cup vegetable oil
1 tbsp white sugar
4 tsp baking powder
1/4 tsp salt
1/2 tsp vanilla extract
Preheat waffle iron. Beat eggs in a large bowl with a whisk until fluffy. Beat in remaining ingredients until smooth.
Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot.
